I'm a ska freak; I love ska and I can't help it.
As far as bands go, my favorite ever is Suburban Legends. Now I think all their work is awesome, but some of their recent work is more funk-influenced than their older work. Check out "Desperate", "Up All Night", "High Fives", "Popular Demand", "Don Juan", "I Want More" [my all-time favorite song], and if you can find it, "Gummi Bears".
Other bands to look into:
Streetlight Manifesto - the entire album "Everything Goes Numb" is phenomenal. Check out the title song in particular, but most of that CD is ******** great.
I Voted for Kodos - in particular, "She Hates Ska" and "On The Phone" are two great ones.
Save Ferris - if you're into cover songs, "Come On Eileen" is great, but "Under 21" and "Spam" are two I find myself listening to often.
Flip The Switch - "Luckiest Guy in the World"
Ska Daddyz (SDZ) - "Hotel California" (one of the best ska cover songs I've heard)
Rx Bandits - some of their stuff is more progressive or even indie, but it's a unique sound they produce that has a major ska influence. Check out "What If" (the most angry ska song I've ever heard).
List of other random ska bands to look into: MU330, Joe and the Slightly Overweight, Mustard Plug, Skankin' Pickle, The Pietasters, Ska-P, The Slackers, Westbound Train, The Suicide Machines, Mad Caddies, The Hippos, The No Tones, Bomb Squad, Fishbone, Buck-O-Nine, Catch 22, Capdown, The Aquabats, and Against All Authority.

Real ska music is the music that was coming from Jamaica in the 60s and early 70s. It goes in the reggae genre. That includes Bob Marley, but pre-Island Records. Desmond Dekker (Israelites is infectious) , anything off of "The Harder they Come" (deluxe edition is ska 101), Skatalites, Prince Buster, Toots and the Maytals. That was the first wave.
The stuff that came in the 90s was either called sca-core or ska-punk. This was the third wave. That's where No Doubt pre Tragic Kingdom, Sublime, Bosstones, and the others fit in. Green Day and Offspring were a part of it.
Bosstones and Rancid (and Operation Ivy) kind of mixed up the punk with ska around the same time, as did a bunch of other forgotten bands, also keep in mind that the Bosstones were on a San Diego label.
But what matters is the second wave. Madness, Specials, Beat, Bad Manners, Selector, General Public. The Clash without a doubt had a huge part in the second wave ska revival.

TONS of good ska bands.
Mu330, Weird type of ska but really good
Mustard Plug, a lot of energy and more punk oriented
Operation Ivy - TONSSSSS of energy, There isn't ONE person who doesn't like Operation Ivy
Voodoo Glow Skulls - Really good but mike's vocals get old after a while.
Reel Big Fish - More pop-punk oriented but still catchy.
I could go on.

No doubt is a good band to start with, but Victimas del Dr. Cerebro is an excelent mexican Ska band. You'll love the song "el esqueleto".

I have to agree with the Less Than Jake and Operation Ivy.
Crash Hall Dancers have a Save Ferris sound (Lost Again is my fav song by them)
