Sedimentary rock tells geologists about the depositional environment in that area when the rock was being formed. For example there are evaporite deposits in the middle of north America which were formed millions of years ago when that part of the continent was a shallow sea.

Oil. The worlds economy depends on sedimentary rocks which both source and trap oil and gas.
They also tell you the history of the world which is pretty cool

It contains fossils and can be the best method of determining geologic history (rock layers tell the history, but fossils tell what conditions existed). Sedimentary rock is made up of the reminants of all three types of rock.
