Hybridization.
They can also be called cattalo.
The "bison" on Santa Catalina Island, off the coast of Southern California, are exactly the result of such cross-breeding. Studies performed (by USC undergrads!) on mitochondrial DNA showed that there were characteristics of both the cattle and the buffalo.
However, the Catalina bison aren't doing so well. The island vegetation does not meet their nutritional requirements, and many bison have sores and are hundreds of pounds underweight. This might be a case in which the hybrids are less fit than either of the parent species.

Hybrids.
Hybrids between different species within the same genus (like cows and buffalo) are sometimes known as interspecific hybrids or crosses.
