The hippies and the cockroaches would reach an agreement to eat the Kraft dinner, and then an ivy plant would come and take over and rule the world. (Ever tried to kill one of those things?)

It all depends as to what causes the cataclysm. If it is atomic bombs, cockroaches an other insects would survive, and of course, plants. I am sure there would be a balanced ecology out of them. If it is a bacterial mutation that kills all animals, the plants would also reach a balance somehow. I do not understand why you include Kraft dinner. As for hippies, I assume you include them because they are supposedly more attuned with nature. In reality, to live in the wild requires quite an education, and life in civilization is quite easier. It would be complicated to explain, but as a demonstration, I will use the fact that when industrialization is bought to a nation, farmers leave the fields in masse, they stop only if they do not see a vacancy to fit in. Hippies would not survive for long. The idea that they can survive is based on illusion, that life with nature is simpler than civilization.

Roaches. Hippies wouldn't want to hurt them, eat too much Kraft cheese, pass out & not clean up. Remember, hippies hate water. Roaches would multiply at a faster rate & easily take over.
