My best parties are always theme parties. The two that stick out in my mind:
Our Halloween party last year. We spend tons and tons of money on decorations. We covered our entire hallway in clear plastic and then splattered blood all over so it looked like a crime scene (if you've ever seen the Showtime series "Dexter" we modeled it after his crime scenes). We covered the house in skeletons, bats, and orange lights. We had some of those blow-up decorations that people usually put outside, but inside out house (one was a haunted house snowglobe type thing, one was a GIANT glowing green skull).
My aquatic birthday party. We made everyone dress up in an ocean-theme outfit (bathing suits, hawaiian print etc.) and we covered the entire house in shiny blue fabric. We bought a bubble machine and then put up tons of other decorations (fish, parrots, tiki statues). Even though it was for a 21st birthday we bought a pinata, and it turned out to be a really fun idea. We also made the food match the theme (swedish fish, goldfish etc.) People showed up in wet suits, bathing suits, dressed as pirates etc.
Theme-y/costume parties are really a hit, at least with my friends. Silly fun things that kids do often work really well for older people too (candy, pinatas, twister). We always have the party basics on hand (fun people, music, alcohol, decorations) and we try and be thoughtful by having things most people forget (i.e. sodas for people not drinking, lots of carbohydrate foods so people can eat before driving).

My old roommates 21st b-day.
We got 3 kegs. Started it off around 10 a.m. drinking. It was perfect weather, about 80 degrees. We just sat outside, listening to music and drinking. Playing games like tip-cup.
Around 100-120 people showed up that night. There were only 4 fights. One window broken and one car that got all it's windows busted out.
Cops didn't show up until around 2 a.m. All they said was, we'll be waiting at the bottom of the hill making sure no one drinks and drives.
It was a great night!

A catered Christmas Party several years back with about 100 friends. It was your usual holiday fest when suddenly a Gorilla appeared at the sliding doors on the side of my house. Since I had had a stalker, initially I was freaked out. Then I discovered it was one of my girlfriends who decided to celebrate my birthday two weeks early! She was very good as a Gorilla -- I think she missed her calling.
