There are surface mounting snap together metal channels ("wiremold") that are what you are talking about. They don't really "hide" the wires since they stick out from the ceiling almost a half inch. They do safely cover the wiring and come in colors like white or in a beige you can paint to match the ceiling.

Have a qualified electrician do the job. You don't want a spinning fan to fall off your ceiling though you won't be the first.

you can use a pvc plastic molding, its so easy to install. for a ceiling fan, i suppose, you use a 2-2.0sqm wire. you will need a cutter blade, a rubber cement (or a wood screw) and the 1/2" pvc molding.

I work at a electrical supply house and the brand we carry is called WIREMOLD. You can get either plastic or metal, and it even has 90 degree elbows and couplings to go with them.

Mathew has the answer. However. ensure the box will handle the weight of the fixture. You might possibly need to retrofit the box by strengthening it.

Chase a hole in the sheetrock, then bury the wire in it.
Mud over chase hole, texture and paint.
