As far as I can remember, Spock never married. In the episode "Amok Time" his "fiancee" was named T'pring. She did not want to marry Spock, didn't want to be married to a "legend." She chose Kirk as her champion to circumvent a marriage to Spock. She succeeded in this and ended up marrying the one she really wanted to marry, Stonn.

T'Pring is what I recollect. However as the companion of Mr Spock she was often called Mrs Spock.
