i think one would be inspection and one would be taste testing, but what are somemore?? I can't think of any.

Consistency of ingredients would be most important. You would need flour with a consistent gluten content, Herbs and spices from a reliable source, consistent sauce recipe.

Were not talking FDA stuff here. What is important is that a pepperoni pizza in January is the same as a pepperoni pizza in August.

1. How is the dough made? Is there a recipe written down. What ingredients go into it? Who makes sure they are correct? Does the water being used to mix the dough taste good? Would it be worth using spring water if the city water doesn't taste right?

2. How is the sauce made? What quality ingredients are being used? How about the spices and seasonings? Do the employees know exactly how much sauce goes on a pizza?

3. Now, let's consider the toppings. What will you offer? Where will you buy them? Are they good quality? Do they taste the same each time you buy them from your purveyor? Do the employees know how much of each topping goes on the sauce? Which goes on first the cheese or the additional toppings?

* Meat
* Mushroom
* Olives
* Peppers
* Pineapple
* Pork
* Sausage
* Vegetable

4. Now you have to bake it. Is the oven heated to the correct temperature? Do the pans make the pizza taste better or worse? Are they being washed correctly?

5. When it comes out of the oven, what kind of serving tray does it go on? Are they throw-away? If not, are they being washed properly.

6. If you do take out, what is the packaging like? Is it comparable to the quality of your pizza? Does it keep the pizza warm? Is it of sufficient quality so that the pizza tastes the same when you take a slice out of the box in ten minutes?

7. Is there a manual for keeping the pizzeria looking clean and neat from the kitchen to the display cases and tables?

8. Do the employees look clean and neat? Are they washing their hands after they go to the bathroom?

If it's made in a real Italian restaurant by a real Italian, the quality is already there.
