In my experience, Sherry is more common.
However, there are many variations:
Sheri
Sherrey
Sherie
Sherri
Cherie (ch is pronounced like sh)
and so on...

Everyone's correct so far. But personal experience is often an iffy basis for answering this kind of question. How do I know the handful of people *I* have met are a fair representation of the whole?
Fortunately, we have "hard numbers" from the U.S. Census.
They've posted a number of files from the 1990 census on the internet -- lists of male first names, female first names, and last names, by their frequency
According to the female name file, the name/spelling "Sherry" ranked much higher than "Sherrie", #119 vs. #512 among female names. (In fact, it is about SEVEN times more common.)
Here are the main numbers from the list (I've also added "Sherri" which falls between the others).
NAME - FREQ (%) - RANK
Sherry - 0.178 - 119
Sherri - 0.062 - 297
Sherrie - 0.026 - 512
You can see the entire file here
http://www.census.gov/genealogy/names/dist.female.first
And here is the main page, which explains what the numbers mean.

Most women I know with this name are named Sherry. I do know one who is named Sherri without the "e."
