It means either the fittings are not clean (and need more cleaning with steel wool or emery cloth or a wire brush) or that you failed to put enough flux onto the fittings.

Either way you are suffering from dirty copper which is easy to cure.

I agree with everyone else. Make sure the copper is clean, both the pipe and the fitting. Use steel wool or emery cloth to clean them. Also, make sure you used the correct flux for soft soldering. Flux the pipe and the fitting. Then make sure the torch you are using gets the pipe hot enough. If the pipe and fittings aren't heated up enough, the solder will melt but roll off of the pipe. brush on flux to both fittings before soldering.

I'm thinking you may need to reclean your fittings, then apply a new bit of flux.
