Could I keep just one guppy in a community tank or do I need more.

Guppies do school in nature, but actually guppies only school in response to predators in their environment. Several studies have shown that with a lack of any predator in the environment guppies will stop schooling at all.

What does that mean for aquarium fish? They have been raised for generations in an environment with no predators so the guppies you find for sale at the pet store will not want nor need to school to be comfortable.

One will be plenty happy in your tank.

They are not really schooling fish. You should be fine to put one guppy in a community tank. If you ever decide to get more than one, make sure to stay with either male or female because if you get both you will have LOTS of babies.

Yes they are peaceful schooling fish; happiest in groups of five or more of the same species; great in community aquariums ..

They do well in mating pairs but I did this and now I apparently am running a breeding service.

They are, but they are most happy in pairs ( male/female).
