For my child's birthday party the kids bobbed for apples and LOVED IT. Then I gave each of them a large water gun and put a bucket of water out so they could refill them when they ran out of water. They had a GREAT time. All my friends had "themes" and elaborate whatever.... and it was such a headache. Let them run around outside and they have fun and you don't have to do anything but laugh.

We had an outdoor party when my son turned 4 and had a puppet guy come do a puppet show, and face painting. The kids even got to help him out! My son's preschool ended up using him for there fun day too. He was awesome. If you have trouble finding one, ask your childs preschool, daycare or school.
Tried to get a magician this year for his 6th, but he was booked into summer!

Many pet shops have people who provide live animal shows for children's parties and events. These shows give the kids a change to see and (in some cases) touch live animals.
This type of "show" is very informative and enjoyable for the kids.
I once took a collection of snakes to my stepdaughter's school to talk to her 5th grade class about these animals. The kids LOVED it.

Consider a scavenger hunt. My daughter had one recently called an ABC scavenger hunt. The teams must find an item which begins with every letter of the alphabet from A-Z.

Have the kids bring swimsuits.
Go to your local sign shop and buy 25 ft. of banner material.
run your hose at one end and make a long Slip and Slide.

well those blow up slides that have a little pool at bottom are fun!!for my nieces 4th b-day we did that it was a blast!!
