I would say because it rhymes and this made it a catchy phrase.

It might be because red is not as common a color for hair as brown or blonde or even black, which some argue to just be a dark shade of brown. By calling someone a redhead, it makes a distinction between the majority of people who do not have red hair. As you have mentioned, people with brown hair are referred to as brunettes, people with blonde hair are referred to as blondes, and it doesn't really sound right calling people with red hair "reds," so the term "redhead" was created.
