Brighter colors are attributed to the color-enhancing fish food. If your fish food states it's color-enhancing, then this is why she's brighter.

It is normal for betas to change color. Both male and female betas will respond to proper care by changing color. Females often start out life lightly colored or drab, but will blossom into many different colors if they are cared for well.

She probably got excited or something. When I had bettas and they saw each other, they would flare up and one got pale, and the other got redder. If you have a mirror close to her, take it away, and it should change back to normal.
