Shrimp-Stuffed Mirliton

The "chayote" squash, as it is known in Texas, is commonly referred to in Louisiana as mirliton.

Ingredients:
• 6 large mirlitons
• 3 cups boiling salted water
• 4 slices bacon, cut in 1 inch pieces
• 1½ cups onions, diced
• 1 cup bell peppers, diced
• ½ cup celery, diced
• 1 Tablespoon garlic, finely minced
• 1 14 ounce can diced tomatoes, drained
• 2 green onions, chopped
• 1½ teaspoons salt
• ½ teaspoon black pepper
• ⅛ teaspoon white pepper
• ⅛ teaspoon cayenne pepper
• ¾ teaspoon dried thyme
• 2 whole bay leaves, crushed
• 3 Tablespoons fresh parsley, finely minced
• 1 pound fresh shrimp
• ½ cup plain bread crumbs ________________________________________
Method:
1. Slice off the stem ends of the mirlitons and place them in a large pot.
2. Add about 1 inch of boiling salted water.
3. Cover tightly, reduce the heat, and boil for about 20 minutes or until tender.
4. Remove the mirlitons from the pot, drain, and allow them to cool at room temperature.
5. When cooled, cut them in half lengthwise.
6. Scoop out the pulp with a spoon, leaving intact a shell about ¼ inch thick.
7. Chop the mirliton pulp and set aside
8. In a black cast iron pot, fry the bacon until translucent.
9. Add the onion, green pepper, celery, garlic, tomatoes, green onions, and mirliton pulp.
10. Sauté for about 8 minutes or until the vegetables just begin to turn soft. .
11. Add salt, pepper, thyme, bay leaves, parsley, and cayenne and blend well with a wooden spoon.
12. Peel, devein, and cut the shrimp into ¾” pieces
13. Add the pieces of raw shrimp and cook over low heat just until the shrimp turn pink.
14. Add the bread crumbs and blend well.
15. Preheat the oven to 350°.
16. Fill the reserved mirliton shells with the shrimp and vegetable mixture to a raised rounded shape.
17. Butter a large shallow baking dish lightly and bake for 20-30 minutes or until the tops are nicely browned.
18. Serve hot.

It was educational for me.
