what are some exercises to build eye-hand coordination in baseball?

For offense it would be batting cage, batting cage and batting cage. Get used to doing the same thing over and over in the cage and it will transverse to the playing fields. I would bet that your eye-hand coordination is their and it is technique you need to work on. same thing thing for defense, take a hundred ground balls a practice and try to get the technique down to where you do the same thing each time

Depending on where you live what i found a good drill to do is get a simple wiffle ball bat and toss small pebbles into the air and hit them, this is getting you to focus on hitting a small target therefore hitting a baseball will be easier. What i found the best is the advertised, hit-away. yes it works and yes you will hit more, its not all hand eye coordination it also get you used to keeping your head on the ball, doing this will get you more hits

A great drill for hitting is to have someone throw tennis balls to you with numbers written all over the ball... as you hit the ball, you call out the number that you saw as you hit.

Make sure that each tennis ball is numbered differently with a permanent marker.

Like for watching the ball when you are hitting? My coach used to tell me to bite the front shoulder of my jersey to keep my eye on the ball. If you keep your eye on it you will hit it, because your reflexes will be fast enough to follow.
