The Beatles did many covers that most people now consider Beatle songs---as opposed to the originals.
"Twist & Shout" (originaly Isley Bros.), "Money", "Dizzy Miss Lizzie", "Words of Love" (Buddy Holly).
Rolling Stones "Ain't too Proud to Beg" (originally the Temptations).
Lots of good covers of songs originally by Bob Dylan: "Mr. Tambourine Man", "My Back Pages" (the Byrds); "Blowing in the Wind" (Peter Paul n Mary); "It Ain't Me Babe" (the Turtles).
Best example of the cover completely outdoing the original IMO is "Blinded by the Light"---originally Bruce Springsteen's, but made popular by Manfred Mann...who also covered Dylan's "The Mighty Quinn".

One good one is Pearl Jam's "Last Kiss." I can't remember the original artist though.
Another good cover is Jimi Henrix's version of "All Along the Watchtower." It's originaly a Bob Dylan song. Both versions are pretty good.

I really like "Knocking on heavens door" covered by Guns n Roses, originally sang by Bob Dylan, also Dancin in the streets is good by Van Halen Originally sang by , Now I'm not positive but I think by The Supremes.
