Speaking from the viewpoint of a former butcher's assistant, NEITHER. Bacon is smoked side pork and is loaded with fat. Sausage is loaded with fillers and stuffed into casings and also has a higher percentage of fat. BUT, if you asked me what cut of meat I would rather bring home, I would tell you a couple of fine boneless rib-eyes from a yearling calf, or the tenderloin. Both would be just lovely on the barbecue tonight.

I would bring home sausage.you can make breakfast burritos and sausage sandwiches,Breakfast eggs,On the grill.I like bacon,but you can do so much more with bacon
