you will not be able to retrieve it from your phone, but if its a contract phone try looking back on your call lists and it will be there.

If the number was stored on your SIM then so long as it hasn't been over-written then you can manage to 'un-delete it' in just the same way that files can be un-deleted on a PC. Some of those keyring like things for copying SIMs can un-delete numbers and previously received deleted text messages. It's possible that it has been overwritten though, so I wouldn't spend to much time or money on looking for a SIM card reader.
