So ive decided to attened LE CORDON BLEU!!! and am excited.. but i have no clue what school to apply for... i wanted togo to the one in las vegas, but at this point im open to anything!!! PARIS? AUSTRALIA? CALIFORNIA? hehe..help me out here.. any advice on which school is the best. and also.. imintrested in pastrys and bakeing.. ive done alot of bakeing but nothing like the quality im gonna learn there.. i also like to cook but bakeing is much more my style..the culinary course also have 6 weeks of bakeing and pastry... and i think it would be easyer to get a job with that.. but id rathermajor in the pastry department... any advice.. thanks!

There was an article about culinary schools int he NY Times just a few days ago. It said that the pay for chefs is so low, that most culinary graduates can not make enough to pay back their school loans.

You need to be thoughtful about how you arrange your career. Being a chef does not pay well and does not give you job security. You will have a hard time taking care of your family on a typical chef's wages.

In order to be a successful food service professional, you need to be able to cook at a high skill level, but you also need to have business training - in accounting, management, legal issues, and in fact, a general education that makes you more than just a kitchen slave for someone more educated. You need to know how to run a food business.

Two schools in America that can give you a total education in food service are Culinary Institute of America and Johnson & Wales University. You should look into them to see how you can become an educated food service professional, not just someone else's underpaid employee.
