We have laminate 'wood' floors that got saturated with water not too long ago, but we thought they had dried out. Now we are getting these enormous slugs coming into the kitchen at night, and can't track them down. Are they coming in because we have hidden water damage under the floors? Will we have to replace our flooring? Does this mean we have a bigger problem than we thought? Help!

slugs are often a sign of moisture or ventilation problems
you said your kitchen got wet
maybe your ventilation under the house is poor and still has not dried.....in this case you need to install double vents and importantly get a cross flow
you may also have leaking plumbing or poor drainage both would need to be attended too
all these issues make the ideal conditions for termite attack
get a termite inspection and the pest should advise you if you have these problems and how or who to contact to repair
fixing the reason the slugs are there should solve the problem

Maybe this will help: I was called in to a place in Vegas. The son of a woman cleaned his huge aquarium in the wash behind the house, a dry wash. It hadn't rained in months.
Soon after she was deluged with these huge slugs, snails, whatever you'd call them, as big as my thumb, all over the side of her house, in her house, her lawn. Her son thought that was great.
The exterminator thought it was a cast off of a genetic throwback of the ones tossed off, this is what happens when you toss out something like this.
He did get rid of them but, warn her about it the next time this happens. Be careful.

That is possible check with an a professional bug killer also you may want to try some liquid soap around the walls and doors of the room and you may find that they will stop coming into your kitchen. it acts as a repellate,
