I was just wondering, if I were building a house up in the mountains where there are no sewage drains, how does it usually work? Where would all the waste water go? Thanks!

Septic tank rather large is buried in ground little ways from the dwelling. The household waste drains into it. You put enzymes like in a motor home 'black water' tank. Gets vacuumed into a truck at given intervals.

If you can't tap into the city or county sewage system, you will have to use a septic tank and leech field. Your county or state health department have the information you need. (Keep the septic system down slope of your well)

To be legal certainly both answer number 1 and 2 have the solution.

It's possible and likely that there are still people who use "outdoor plumbing" but it wouldn't be my choice. You could also use chemical toilets, but I wouldn't go that way either.
