My personal favorites great Carnitas, and a variety of home made salsas. To really answer this question, it would be important to know what type of restaurant you are opening. How casual will it be? Will you be selling Taco's & Burrito's, or will it be a sit down dining establishment? Who are you catering to? Will you be cating to families, young people, everyone, and so on.What state are you in? I live in California, and we get wonderful fresh produce here. And we also have tons of great Mexican food here. I personally prefer a more authentic style of Mexican food, but you may live in an area that people prefer a more Americanized version of Mexican food (things like Chimichonga's, and 7 layer Nacho dips) . One last little thing. If you have never worked in a restaurant, I suggest you do it for a little while before opening your own, or hire good people to assist you (Managers/Chef). You can also go on line and check out what other Mexican restaurants are doing.

Get a liquor license, sell cerveza and various kinds of tequila at a low price. Stick to basics like tacos, refried beans, enchiladas, burritos. Allow the customers to select 1-5 on a scale of spiciness. Fajitas are essential.
The main thing with Mexican restaurants is quality and atmosphere. The food should be hot and fresh, the beer cold.

i like chicken enchiladas with green sauce. i hope your rice and beans are good. there is nothing worse than getting a good entree and bad sides.
i always judge a good Mexican restaurant on their hot sauce. flavor is more important than 'heat'.
