It's due to the unsuitable shoes they wear. The shoes throw a stress onto the knee joint by squashing the toes into a small space and giving a smaller area of foot to balance the body..
This forces the lower leg to splay outwards and therefore give the effect of knock knees.
This gives rise to arthritis in later life.

I think it's the natural shape of most legs, but you can't see it so much when someone's got a decent amount of meat on them. Because the models are so scrawny their legs look wrong.
