It was quite a while back, but I saw clip of her with Stephen King and another author. At this press conference, she said she would be doing a book for younger children, if I recall correctly.
Edit: It was bugging me, so I found the interview. At the very end of this clip she said she has a shorter book for children that is kind of half written, and that's probably what she'll be doing next. It's the last few seconds of this 9:15 clip.

Harry Potter is my absolute favorite. It has almost been like a security blanket for me. When I'm feeling sad or depressed, I dive into the fantasy world of Harry Potter and I feel better. It's funny because Harry Potter is the only fantasy book I can read. All the others bore me. And like you said, JK Rowling has still left mysteries to be uncovered and I love how all of the books fit together like a puzzle. I read the first Twilight book a few years ago, but it didn't really interest me very much. Twilight is more of a romance book as opposed to a fantasy book. I also think that Harry Potter is much more... user friendly. Like, more people of different ages and with different interests can appreciate Harry Potter, while Twilight tends to appeal mostly to teen girls that are in love with the vampires.

JKR have no plan to write 8th HP book. I think she will write some great books again. And sure, doing her daily activity as a mom and a wife

She is going to write an encyclopedia of harry potter books for charity.She has confirmed it in her website!
