so it means that cultural relativists believe our personality /identity will ALWAYS be affected by culture/environment because it shapes your beliefs and that the beliefs in turn will affect personality, therefore most of your identity/personality is down to culture?

My answer isn't intended to rationalize cultural relativism,
but I do make an effort to show that cultural relativism
doesn't collapse if mind and body are believed to be
separate entities.

If the mind is separate from the body then so long as
the separate mind and separate body are within
similar cultural mind and body axioms
the cultural proximity should still be intact.

Consider the following content index with each culture
identified as an uppercase letter and each individual
identified as a lowercase letter. Notice how none of the
lowercase letters appear in multiple cultures. Therefore, even
as separate pieces the mind and body can remain within
the same cultural proximity.

Culture A...Mind...a,b,c...Body..a,b,c
Culture B...Mind...d,e,f...Body..d,e,f
Culture C...Mind...g,h,i...Body..g,h,i

No, that is not what it means. It means that your culture will effect your perception of things, no matter what, but it does NOT mean that your culture exclusively controls your personality and identity. It is an undeniable major factor, but not necessarily the only one.

The mind being separate from the body (deism) is an entirely different and irrelevant concept to cultural relativism.

No, your identity can come from things other than your culture and environment. For instance, a man growing up in the South can occasionally not become a racist redneck, uttering "Git-R-Done" at every possible opportunity.
