Select the text you want to move or copy by clicking with the left mouse on the text and while STILL HOLDING the mouse button down, drag the pointer until all your text is highlighted. You can now release the mouse button. Then you either press CTRL-C to copy the text OR with the mouse can try and RIGHT-CLICK on the highlighted text which should bring up a menu. Select COPY from the menu.
To paste that into your email window you can try one of several things.
First try left-click in the window where you want the text and press CTRL-V on your keyboard to paste the text there. If that doesn't work try right-clicking in the email window and see if a menu pops up . If so then select PASTE .
If those don't work then try looking at the top of your window for a dropdown menu that has the word PASTE in it. Most of the time it will be under the EDIT menu but this will vary depending on what email program you are using.
My guess is that this these suggestions will work for over 95% of the email programs out there whether they are web based or local software.

Highlight the words you want to put on your email by moving your mouse to the end of the last word, holding your left mouse button down whilst moving your mouse up to the beginning of the first word.
Right click on the highlighted area, a menu should drop down with copy, cut, paste on there
select copy
now move to your email, or word document.
right click on there, a similar menu should drop down
select paste.
hope this works for you.

If you mean, from an already-formatted document (like, say, a Word document)? ... Doesn't copy-and-past work? In other words, just open Word, highlight the text, click copy, then open your email (like, say, in Yahoo!) and on your browser's toolbar click Edit and select Paste...que no?
