You could try to edit your xorg.conf file manually, but the better way is to open a terminal window and type:
sudo dpkg-reconfigure xserver-xorg
This will start a terminal program to configure your mouse, keyboard, and monitor/graphics card settings. During this setup you will be able to select the max resolution you want to use.
Once you are done with the configuration, restart the xserver by pressing
Ctrl-Alt-Backspace
You should now be all set.

See this picture:
When we talk about troubleshooting video failures, we're usually talking about no image at all on the screen. The easy cases to diagnose are those where the monitor or LCD isn't powering up properly, or the PC not powering up. Video card failure isn't uncommon, and video cards can lose their contact with the motherboard, especially early AGP adapters which frequently popped out of their slot. Video failure can also be due to motherboard failure or to external interference, when it comes to poor image quality.

while booting up only you have an option to to press f1 or f2 i am not quite sure...and then the command is something like force vga 800,600 something like that. rather I'll suggest use the help while booting it has all the commands..or try going through the release notes.....or browse through the ubuntu forums. this might help you to reconfigure though..:
