Retrosheet.org has nearly-complete matchups dating back to 1957. Go to an individual player's page and click "Pitcher Matchups" (or for a pitcher, "Batter Matchups").

Here's Sheff v. anyone he's faced more than one or two times: http://retrosheet.org/boxesetc/S/MU0_shefg001.htm

Against Schilling, he's gone 14-63 with 4 doubles, 2 homers, 10 walks, .222/.324/.381 (noted as being incomplete -- I think 1999 still hasn't been fully reduced).

STATS Inc used to do a book every year giving just these number. I don't know if they still do it or not, but that's the first place I'd go to look.
