When I was about 6 years old (1981) I used to always play an arcade game at a bowling alley. All I remember is that you had to jump over men with spears while running at the top of a castle. The men would be in the dips of the castle wall and poke their spears up. Does anyone know what I am talking about?

This isn't Mario or Persia. It was really an older arcade (stand-up) game. I think it took place in medieval times but not sure. I think the main character was a knight. It was in 2-d and you literally were running across the top of the castle...

Not ghost and goblins. I don't recall doing anything other than running across the top of a castle the entire time (1981 timeframe)...

The time frame you say of 1981 seems to be off. I couldn't find anything until 1986 that fit the discription it was:

Oh yea, good times. I'm going with Ghosts and Goblins on this one. Your almost describing it to a T. They just remade the game with updated graphic but same basic game play for the PSP. Look up the game for PSP and if it looks familiar, then that's the one...

fairly a stretch, although the Kirby video games had slightly pink guy that would want to become a ball (between different issues) and had animals for dissimilar the mini bosses (yet no longer the significant bosses)

I think it might have been "Ghosts and Goblins" (done by Atari if memory serves me correctly) - Were you dressed in armour and if you got hit you first lost your armour then if you were hit again you got killed ?
