go to download.com and get the software called mail cleaner. my friend wrote the program years ago and it works great. one click and it cleans it all up!

Copy the text of the email
Paste it into a word process or (or notepad)
Use the "Find and Replace" option to find all the ">" and replace them " ".

D's answer is good but would suggest you use wordpad as notepad does not have a decent search and replace facility
