The manual says that I should take it to have it refilled but it seems like it would be something easy enough to do....

Sure you could.
It's a sealed system, and putting freon in may just leak back out again.
I recommend having it tested for leaks first.

Yes just go to walmart or an auto store and by a kit and the cans of refrigerant. (total about $25.00-$40.00) most times the kits come with a DVD you can watch to show you how to do it. we refilled mine on my Jeep Cherokee and on a Nissan Maxima. just about any car can be refilled but if you have a leak of something else wrong with the system you may not get any results. so if it doesn't work you may have to look into getting it fixed.
