The term 'on the street' is talking about a person who lives on the street... usually a homeless person, or a 'streetwalker' etc.

'in the street' can be used in the same way, but more often is used to physically describe the location of someone. An example: The children were playing in the street.

Essentially nothing. I don't hear in the street used much but it usually refers to work being carried on in the street or big changes in the street. Maybe in the street refers to ones place of living and on the street refers to maybe a particular shop

'On the street' (singular) is used to describe travelling - 'he was riding his bicycle on Watson Street', 'I was walking on the street where we met' .

It is also used for the location of buildings - 'I live on that street' 'The shop you want is on Watson Street'.

In all these cases you can also say 'down the street' instead.

'In the Street' like Tom says, means physically on the road or sidewalk surface - 'he was just standing in the street like an idiot'.

'On the streets' (plural) is less specific - you can live on the streets (live rough) work on the streets (prostitution),
