Gravity causes everything to form into a sphere and orbit in a circle or ellipse. It's to do with equal forces being applied to everything - for a triangle or square to be formed there would have to be differing forces involved and there isn't, only gravity.
You'd probably get a more scientific explanation from the Physics or Astronomy sections.

Surface tension properties, for fluids (the planets were in a molten/gaseous state before they cooled down, or are yet cooling down), in a state of free fall, or zero gravity conditions. Applicable to most stars too. Have you seen the globules of mercury, which are not even in a state of free fall, but have strong surface tension? Raindrops, are another example. The external surface area tends to be minimum, which is the case with a sphere, and not any other shape, given a fixed mass.
