Use two nets to gently herd the baby convicts away from their parents. It takes pateints but you will get the results you want. and as soon as they are able to swim

As soon as they are free swimming and eating by themselfs. I have seen Convict's eating there babies before. They like to snack on there babies sometimes, obviously, but if they are not eating them, you can keep them as long as you'd like with there parents ^^

2 to 3 weeks, but if the parents are practicing good parental care, and if the tank mates aren't eating them, I wouldn't advise taking them away from there parents.

You dont have to, Convicts will not eat there young unlike other fish.

When you can clearly see them from 3 feet away from your tank, and if they are swimming.
