A protein skimmer that has an adjustable air flow is all you need. This will control the size of the bubbles for the skimmer. If you get one rated for your tank size or larger you can control the flow and the bubble size. One that is adjustable is just as good as the next, really.

There are lots of good models, and their efficiency is based on the bubble size and height of their column, because the longer the water is in contact with the bubbles, the more material that is removed. You should get a skimmer with a column at least as tall as the tank.

Although models that use a wood airstone may produce smaller bubbles, you'll be replacing the stone frequently. I prefer the venturi models, although you'll still need to clean the airline periodically.
