Modern dairy farms use mechanical milking machines. They have generators for emergency use. In order for a dairy cow to produce milk on a consistant basis it must be milked on a regular schedule. Cows today produce very large amounts of milk each day. A cow who is not milked for a long enough time will be in discomfort. Long enough and they may devolpe health problems like mastitis. Moreover, milk production will suffer and milk is the farmer's way of providing for his family.

The previous answer is correct; full udders can be exceedingly painful. However, a further answer is that cows need to be milked regularly or they will stop producing milk.
