Well, I am a chemist. Most organic acids are weak. Acetic acid in its pure form is actually strong enough to eat skin. A good few examples of strong acids are: Hydrochloric acid, Sulfuric Acid, and the worlds strongest acid that can eat glass, Hydrfluoric acid.

Sorry eric, formic acid is one of the strongest organic acids. Haven't you been 'bitten' by those tiny red ants?
I will concur with acetic acid as being weak though it is sour for your teeth.
Most of the organic acids in soap are weak - stearic, palmitic, oleic, etc.
