Many animals hide from predators.
Gophers hide in their burrows.
Small birds hide under leaves when they see a hawk or its shadow.
Mockingbirds stay mostly in trees where cats can't get them and hawks can't see them. But they come down to the ground to look for bugs to eat. When no hawk is near, they often get on a pole or other high, open place to sing during the breeding season. But if they see a hawk or its shadow, they hide in the trees where a hawk can't see them. Or, sometimes, they will chase the hawk to distract it and keep it away from their babies.
Rabbits hide among the bushes or in burrows to hide from predators.
Almost every wild animal has camouflage coloring; if they hold still, they can be very hard to see even if they are in plain sight.

Ostrage or emu is my fav. Just puts its head in the ground. I think that they think that if they can't see it then it isn't there.
