Check out the soundtrack to Ken Burn's "Jazz" documentary. You'll get a sampling of the progression of jazz from it's beginnings to about the 1970s, with most of the important artists and tunes of their times. It's a great starting point for a new listener.

Rock & Roll. I've never been into the whole hip hop/rap thing, country is awful, heavy metal is too screamy, jazz and classical (sorry if this offends anybody out there) is more for old people. If I had to put them in order, it'd be Rock, Hip Hop, Heavy Metal, Jazz, Country, then Classical.

If you still like the rock influence, listen to The Bad Plus. They have some really unique stuff in sort of a jazz/rock style. Check them out.

I'll add Pat Metheny, early Herbie Hancock, and Brother Jack McDuff,

And for something really wierd, try Bela Fleck and the Flecktones. They're kind of a Bluegrass/Jazz fusion.
