Do you think the oyster card is the best for a tourist traveling for 5 days in London? Also, can I buy one at Gatwick airport and get the deposit refund (or any money left on the card) there as well?

Oyster cards are almost always the best idea. Fares are cheaper (£1.50 for a zone 1 single instead of £4.00, £1 for a bus instead of £2).

Additionally the system automatically caps your fares for you. For example once you've spent the equivalent of a daily travel card then then all travel becomes free for the rest of the day. Actually it's better than that because it actually caps it at 50p less than the travel card fare.

Oyster is therefore almost always much cheaper than either paying single fares or getting a daily travelcard.

From my last trip to London (last week) I seem to remember a promotion where the £3 deposit is being waived.

You can't buy an Oyster card (or get a refund) at Gatwick as it is too far out of London.
If you are coming into Victoria you can buy one at the underground ticket office.
The best value is a 7 day travel card for zones 1-2. You won't have to pay a deposit on it either.
