Essentially it is because the object which diffracts white light into it's spectral components is round. In the case of rainbows, it is raindrops.
Raindrops are in the shape of spheres when falling (not the elongated teardrop shape that we often see in drawings) So the diffracted light shining through the raindrop is round.
