Because that's not how evolution works.
Here's an online biology textbook. If you really want to understand, you should read it - yes, the entire thing.

Why not ask why there are zerbra's and horses? Evolution is not a linear concept. The idea is that there are many, many genetic mutations happening all of the time. If, for some reason, a mutation proves to be more beneficial to the survival of the species, i.e. color, shape, height, weight, speed, eye-sight, and millions of others, then those individuals with the "luck" (actually its just genetic randomness), are more likely to live to breed and further promote these genetic mutations.
In my opinion, the idea of spirituality and the idea of evolution are not exclusive. If you think of the universe as containing a certain amount of energy, and part of this energy is a collective life force, billions of souls, or something like that. Then souls proceed through all life on this planet. If that is the case, then the souls of those that are not genetically feasable are not inferior, although the body is. The soul progresses to the next. This is the idea of re-incarnation, and soul-progression.
Crazy? Maybe, but no one knows....

Man did not come from apes - a common misguided mistake made by Christians attempting to rubbish evolution!
Man was a close ancestor of Chimpanzees and diverged 5-7 million years ago!
We actually have more genetic materiel in common with snails and cabbages than Apes and Monkeys!
The Pope said only a few weeks ago that science could prove evolution in recent geological time scale but since it took place over millions of years final proof would probably never be attainable!
The fundamentalists really aught to ask themselves whether they are not suggesting that God was too ignorant, stupid and inept to be able to use evolution as a tool of creation!!!!!

I hope you will keep questioning things. Especially beliefs.
And, keep day dreaming! Let your imagination soar and think of how wonderful the natural world is and how much we can enjoy things the way they are without looking for supernatural explanations..
Because you "want to believe in a higher being" will not make the higher being a reality. Just like me believing I am a billionaire will not make it a reality (in fact, it might make people think I am delusional!).

Now you know the real answer, that we are not made of monkeys, if we were, there would be no monkeys, your write, we are Gog's creation! monkey story is a lie. God's hand created you and all that is around, let's say that every thing that was made by human was carefully designed first and then made. God designed you in your own special way there is no one else like you, you are special and your Creator loves you the way you are.

When we evolve the previous species doesn't have to die off. the new species could just be a fluke of nature that survives along side the previous one.

We not only evolved from apes, but we ARE apes!
Other primates on earth have common ancestors of ours that branched off at different times in history. (and pre-history)

1. You're taller, more intelligent, and better looking than your second cousins, so why do you have second cousins? (If you can't figure it out, maybe you're not more intelligent than your second cousins).
2. Christians evolved from Jews, so why are there still Jews?
=
Chimpanzees are (approximately) your 500,000th cousins.
