I've never had this issue with my kids, but when other kids are in my care I use the following techniques. For hot vegetables cheese helps, for cold vegetables dips help. Having the kid help with preparation is a huge help. You'd be amazed at what you can get a kid to eat if you allow them to help make it. Every chef wants people to enjoy the food they make. Not only will they eat the vegetable, they'd make sure that everyone at the table eats them also.

Learn how to cook. Growing up I hated veggies. My parents didn't know how to cook either. I learned how to cook, and now there isn't a veggie I don't like and I eat em every day now.

either force (my 2 & 9 yr old cannot get up from table until they eat the veggies. But I dont overload thier plate or anything) or I hide them in casseroles or something like that.

Cover them with melted cheese or chop them up and put them in stews. Bribery also helps (no dessert until the veggies are gone).

Disguise them!
One of my favorite tricks: puree fresh veggies in a blender, then add that to pasta sauce. The color of the sauce doesn't change, but content does!

My kids love their veggies.. I think it is because i told them if they didn't eat them they would be as short as what grandma is. She is 4'6 and that is on her tiptoes.

they ate them from day 1 then stopped when they got to middle school and found out it wasn't cool.
True story, my son, now 31, used to ask for liver and onions and spinach for his birthday, until his friends found out.
