it could mean what they do this day, say this day, is something they realized was not what they usually say or would have said yesterday or tomorrow, and they are begging pardon, asking that you not believe what they say today, but to ask them again tomorrow for a better answer.
people use that quote when they don't feel well or when they have a headache.

I think it actually means the opposite: that for some reason, we do not have our normal face-saving measures in place (I mean all those things that we do to appear friendly/approachable/nice/cool/calm and et cetera) and instead show people our real faces, with all the attendant nonsense and neuroses and whatever. Saying "I am not myself today" is a very handy excuse in this kind of situation, I think. Too harsh?

usually when a person says that is because they are not in their usual mood. If someone is always a happy person and for some reason is feeling down they might say "im not myself today" Its like saying that they are being someone else today.

I don't know about other people, but I use the phrase in one of two situations. 1) If I'm physically ill and am having a hard time paying attention to someone because my head hurts or something of the like or 2) If I'm in a foul mood and am warning someone to back off before I get angry (which is unusual for me. . .I don't anger easily).

For me, it means that something's wrong or that I'm really acting different (for example, sometimes I will be more outgoing than usual). But I know that many people say it as a trite apology for misbehaving.

we are all human...and when people don't feel like themselves...
it means that on some level our being feels out of sync..
people should pay attention to when they feel like that
.there's usually a good basis for it.
it can be physical..emotional..
it is definitely a signal that either our immune system or brain is sending us.
can be the beginning of a flu..cold...pregnancy..or serious disease.
emotionally it means that somewhere one is been overworked..stressed out..confused..
on a light hearted note...it's like the check engine light in your car..when it comes on..pay attention to it.
