I've done those!

Well first off, let me tell you that these brides are a little overbearing, but it is the happiest day of their lives. =D

You should bring your make-up kit. . . a lot of it!
You should bring lots photos of your previous work in a nice portfolio.
You should give a few make-overs.
Give them tips on how to keep the make-up on etc.

AND MOST IMPORTANTLY,
dress the part, make sure your own makeup is impeccable, wear your all black outfit, and have your makeup brushes out and about.

Don't bother with freebies. . . seriously! They won't know what to do with most likely.

If you enjoy those, you should advertise in highschools newspapers in March-April for Prom. They're easily pleased and they pay the big bucks!

Photos of your work.

Offer free samples of something like a lip balm w/ your business name, website & phone #.

A prize drawing for people who enter their names on a reminder post card for you to mail after the fair or who sign up for your mailing list. (i.e. name, date of wedding, location, e-mail address or mailing address - DO NOT SHARE INFO. or SELL it & state that you won't. People will be more likely to co-operate.)

A few friendly models to chat up people & disply your work in person.

Maybe offer a few mini-make overs or tips for brides to be & members of wedding party to demonstrate your skills.
