What i did in second grade(around the same age as a first grader) was i took different fruits and vegetables and measured their voltage. It was really exciting. What you can use is use a multimeter which will cost around 10-15 US dollars. What you do is just stick both ends(black and red) in to the fruit or vegetable and measure the voltage of the fruit or vegetable.
P.S. How you win is by creating a really detailed project board that is well organized and very easy to read. It doesn't really matter what project you do as long as it looks good!!

My sixth grade science teacher always wanted the boys to see which bubble gum flavor lasts the longest. He an make a hypothesis, do the tests, and figure out which one has the longest lasting flavor. He could also find the simple ingredients online to make gak or other things that kids love to play with. The solar system is also a good path to go down. He could use global warming, but on a 1st grader level...how they could lessen their impact.

Pop rocket. Its simple and easy.
All you have to get is a film holder. Like for the Kodak film and you pour baking soda in about and inch or 2 and then you pour vinagar on top of that, turn it over and it should pop up.

How about growing plants. Beans are pretty easy, have a short growth time and the sprouts are pretty big so you can help him take pictures and document the growth from day to day. He can make a chart w/ drawings or collages of the different things that plants need to live and show the process via photos from germination (in paper towel) to full sprout or full plant. Good luck!

I am not sure if studying plant life is considered science. If so, then plant a bean and watch it grow, the different changes in its growth. It could be the study of photosynthesis in plant life. What do you think. And they can take a plant home to show their parents. And it is simple and easy.
