thaw: 1 a : to go from a frozen to a liquid state : MELT
unthaw: “Unthaw” is another illogical negative. Use “thaw.”

we tend to add letters to a word that makes the exact same thing, just longer lol

They do not mean the same thing. Thaw means to warm up, to unfreeze. Unthaw would be to freeze or to make cold or stiff.
