There are just too many to choose from. So I will give you a list of the ones I like at each of the parks.
Magic Kingdom:
- Space Mountain
- Big Thunder Mountain
- Splash Mountain
- Haunted Mansion
- Pirates of the Carribean
- Buzz Lightyear Space Ranger Spin
Epcot:
- Test Track
- Soarin
- Malestrom
- There is Mission Space, but I can't do it....I get too sick
- Spaceship Earth...such a classic
MGM Studios:
- Star Tours
- Rock N Roller Coaster
- Tower of Terror
Animal Kingdom:
- Kahli River Rapids
- The animal Safari (forgot the name of it)
- Expedition Everest
There are sooo many others that I am probably forgetting right off hand. Have fun, I will be there in 38 days!!!!!!!

well there is space mountain in the magic kingdom
then there is rocking roller coaster in MGM Studios Park
There is a real cool dinosaur ride in Animal Kingdom
My favorite is Test Track in Epcot

it really depends what you are into. if its roller coasters. then the rocking aerosmith roller-coaster in MGM is fun. So is the new Yeti ride in Animal Kingdom. i love the tower of terror,which is a (zero gravity ride) the old favorites Pirates of the Caribbean and Haunted Mansion are always fun. Hell, the whole place is fun. i can't wait to go back..
