I work at the fabric department at Joann's. Joann's has double knit fabric in a variety of colors. It should be in the sportswear/dance/swim wear area of the fabrics.

This is not at all an unusual fabric. Any fabric store should carry it. Getting the right color would be the only problem I could see you having, and I really don't see it being a problem.
